tons, loads and heaps of

I belong to a fantastic international writing group. There, last week, I presented a paragraph that included "tons of something" (I can't actually remember what the noun was). A New Zealander in the group commented, "I suppose we'd say heaps of." 

Indeed.  Here are some imprecise, informal ways of expressing 'large quantities of' in the Corpus of Global Web-Based English. The darker the blue, the more characteristic that phrase is to that country: 



Or, here's a better, but not as pretty way to report these results, as number of occurrences per million words. This makes the numbers comparable across countries (since the individual country corpora are not all the same size). Here are those figures for the three main expressions, with the numbers rounded.

This is saying, for instance, that the American corpus has tons of at a rate of 19 times per million words of running text.  (For comparison, the phrase a lot of is around 300 times per million in each country's corpus.)

So, we can see that tons of is preferred in North America, loads of in the UK and Ireland, and Australia and New Zealand like heaps of but use loads of at nearly the same rate as heaps of

Bunches of 
had less than 1 per million in all of the country corpora. It seems to be more often literal in all countries—lots of bunches of grapes, flowers, or asparagus, and a few bunches of people, websites, and, in one NZ example: "small bunches of noisy wowsers trying to tell everybody else how to live their lives."

I've only shown you the first six countries in the corpus results. After that, we get into Asian and African countries where English is spoken. Tons of dominates most of those—but, at least in the African nations, more of those tons of were literal tons of stuff, like rice or water. Of course, some of the tons in the other countries will be literal tons too—but the difference between North American and the UK/IE/AU/NZ seems to be due to the figurative usage—as in I have tons of friends/problems/blog posts.

The Oxford English Dictionary has not updated its entries for these words since their first publication, more than 100 years ago. But three of the four have been used for informal descriptions of large quantities since the 1600s, and the fourth is the most American one. 

The informal usage of tons is not listed in the OED's 1913 entry for ton, though it does list several colloquial uses where ton means 100 (e.g. as a darts score or £100). The first use of tons of money in the Corpus of Historical American English (COHA) is not until the 1920s. Tons of stuff shows up in the 1940s. Neither of those phrases is used much for decades after that, but the informal use of tons picks up quickly after the 1980s. In the COHA corpus (1800–, the top nouns after tons of are coal, steel and water, while in GloWBE (2013) they are money, people and carbon.

And that, my friends, is the shortest blog post I've written in a long time!  I await bunches of comments!

recipe verbs

When I first moved to the UK, I hungrily watched the (orig. AmE) tv in my sublet apartment/flat in an attempt to acculturate myself. I can't remember if it was on an ad(vert) or on an early series of The Naked Chef, but I clearly remember the sentence:

            Just bung it under the grill!

I already knew grill (=AmE broiler) from my time in South Africa. It was bung (meaning something like 'put forcibly, carelessly') that struck me. It seemed such an unattractive word, and yet it was being used about some food that was supposed to be wonderful after the bunging. Was this telling me something about British attitudes to food and cooking? Was it supposed to make the dish-making seem so sloppy anyone could do it? The questions clearly stuck in my mind, because the phrase has stayed with me for 25 years.

Bung was the first thing to come to mind when Maryellen Macdonald wrote to me:

You have a long post about cooking word differences, but I don’t think it contains a discussion of “add” vs. “tip”. US recipes say things like “add the carrots” to the pan, whereas UK recipes say “tip in the carrots”.  My husband, the better cook in the household, asked me, “What do they mean tip the carrots? They’re cut up!” Hmm, maybe this little observation-ette isn’t quite sufficient for a post, but, perhaps you can use it somewhere.

I'm not sure which cooking-word difference post she was thinking of, since there are LOTS of them. But it made me think about "recipe verbs". Words like bung and tip are not necessarily cooking words—you can bung or tip a lot of things. But they are the kinds of words one finds in recipes or cooking programmes/shows

I started asking my friends for other recipe-verb differences they had noticed. One friend (thanks, David!) pointed me to this parody cooking series, Posh Nosh, in which Richard E. Grant and Arabella Weir are minor aristocracy with an upscale restaurant brand. This particular nine-minute episode includes many great (fake) cooking verbs, instructing you to interrogate (clean?) then later to thrill open your mussels, to pillage some bones and to "gently gush [some AmE broth/BrE stock] until it completely obsesses the rice."


My friends weren't great at coming up with verb differences. (Several nouns were suggested.) Thank you to Ben, Björn, David, Jason, Michèle, Wendi for their suggestions. To complement these, I ended up doing an Advanced Search in the Oxford English Dictionary for region-marked cooking verbs. This post then got stupidly long and AmE biased; the OED is not good at marking words that are general to British English but not to North American. 

For the following, I am marking things as AmE or BrE if either the OED or corpus results fairly firmly put the verb on one side of the Atlantic or the other. But you might know some of the "the other country's" words, especially if you ingest a lot of recipes and cooking programmes/shows. These things have been moving rapidly with mass media.

Some actual cooking verbs

Let's get the actual cooking verbs out of the way—some of these I've written about before:
  • AmE broil v BrE grill is (part of) the topic one of my first blog posts.  Also: 
    • AmE charbroil = cook over charcoal (not very frequent, more common in the modifier form charbroiled)
    • AmE panbroil = cook [meat/fish] in pan with very little fat 

  • AmE grill v BrE toast comes up in a long post about cheese sandwiches (BrE toasties)

  • AmE grill v BrE barbecue comes up in a post from the 4th of July

  • orig. AmE nuke & zap: (informal) to microwave

  • orig. AmE pot-roast: to slow-cook meat (esp. beef) in a covered pot/dish

  • orig. AmE stir-fry (but this has been in BrE for most of your lifetimes)

  • AmE plank: From OED: "Originally and chiefly North American. To prepare (meat, fish, etc.) by cooking it on a board over an open fire; (in later use) to cook on a board in an oven"

  • AmE shirr:  to poach (e.g. an egg) in cream rather than water. (I knew the word, but not what it meant!)

  • orig. AmE flip: Not really a recipe verb, but...from the OED:
transitive. Originally and chiefly U.S. To cook (items of food) by turning over on a hotplate, grill, or griddle. Now typically with the implication that the subject has a job in a fast-food restaurant (chiefly in to flip burgers).

Some verbs that are often used to modify food words

  • roast v roasted (of potatoes, chickens, etc.)—that post also mentions corn/corned beef, which has another post. 

  • skim v skimmed (of milk)

  • minced/ground

  • mashed & smashed:  I've written about mashed potato(es), which BrE can call just mash (now we're back into nouns). A related AmE verbal adjective is smashed. In the Corpus of Global Web-Based English (2013), North Americans have the collocation smashed potato(es); there are none in the British data. The distinction between mashed and smashed is that a smashed potato is less thoroughly mashed—it will still have some (orig. AmE) chunks of potato in it—and may well include the potato skins. 

    These days, you definitely see smashed on BrE menus—sometimes in front of potato but much more often in front of avocado. This Google ngrams graph shows that smashed avocado (blue line) surpassed mashed avocado (green line) in UK books around 2019, but the phrase has not taken off in the US (red line) in the same way, where people just talk about avocado toast without an adjective. (You hear that in BrE too, but it's not as prominent as in AmE.)


Verbs of placing

These are the ones we started with here. They're needed in recipes, but not exclusive to them:

  • BrE bung: to put forcibly, without delicacy. It's very informal word, but that goes with the vibe of a lot of British cooking shows. The closest equivalents are probably stick or throw (both General English), as in stick/throw it in the oven/pan, but bung feels the most informal and dismissive of the bunch. Here are some Google Image results for "bung it in the oven", which show the phrase applied to simple, quick recipes and the people who cook them:



  • BrE tip in means, essentially 'pour in', but it's often used for solids. It can apply to chopped carrots, as in Maryellen's example, because you're assumed to be tipping the chopping board over the pan and 'pouring' the carrots in. The magazine that just came with my grocery order has tip in its first two recipes: bread dough is tipped onto a floured surface. Cooked spinach is tipped into a sieve. 

  • add: Mrs Redboots suggested this one. Add is General English, of course, but she notes a different usage:

        American on-line cooks "add" ingredients to an empty pan.  Can you add something when there is nothing there?

  • pop: British people are always popping—popping in, popping out, popping to the shops—so I suspected that pop it in the oven would also show up as more BrE, but no. It looks like General English in the GloWbE corpus. Google Books has pop it in the oven becoming more common after the 1990s, with BrE use of the phrase overtaking American from 2014. 
    • AmE does seem to like to pop open various things, and BrE doesn't so much. This can include food/drink packaging (pop open a beer), but is often used of doors, the (BrE) bonnet/(AmE) hood or (BrE) boot/(AmE) trunk of a car, etc. Pop probably deserves it own post someday.

Verbs of mixing and cutting

In my experience, British kitchens are more likely to have (more AmE) immersion blenders / (more BrE) hand blenders / (slightly more BrE stick blenders) and American ones to have hand(-held) mixers (BrE also electric whisks). But I only go in the kitchens of those I know, so maybe that's quite biased. It would make sense, though, since UK soups are much more likely to be purées and, until the advent of the Great British Bake-Off, it seemed to me that Americans did more cake-baking (often with mixes, but still—using a mixer). 
  • (BrE) blitz: It sounds a bit slangy, but blitz is nearly the standard verb in BrE for using a blender, especially for short blasts—to the extent that some people call any kind of blender a blitzer. (I did not succeed in finding out how common this is, because the data is overrun with people named Blitzer and sports blitzers, etc.).  Blitz looks like it might be making it into US website recipes.

  • A wooden lemon reamer; it has a handle to hold and a fluted end for putting into a lemon and twisting about
    a wooden reamer
    whisk: This is general English, but only in BrE (and rarely) have I seen it used to refer to the action of using an electric mixer (with whisk-y attachments). It's thus used a lot more in UK recipes. 

  • beat [added 18 Mar 25]: I am looking at two cook(ery) books now, and see that Americans are always beating their ingredients where British bakers are whisking them. Neither word is particular to one nationlect, but the rates of usage seem quite different. (Click for an ngram of beat the eggs.)

  • (orig. AmE) rice to press through a holey surface or mesh to create very small pieces; some people have special ricers for this. Especially used with boiled potatoes to make mashed potato(es)

  • (AmE) pull: to "stretch and draw" a mixture (usually AmE taffy) until it is aerated and ready to set. OED has this as "chiefly" AmE.

    And then there is the pull in pulled pork, pulled chicken, etc. OED has this as "chiefly U.S. in the late 20th century" (but it seems to have come back to the UK with US-style pulled pork).

  • (AmE) ream to juice a citrus fruit, using a device that you twist in the halved fruit. 

Verbs of baking/pastry

To drive upwards, or fasten up, by knocking; spec. in Bookbinding, etc. to make even the edges of (a pile of loose sheets) by striking them on a table; in Bootmaking, to cut or flatten the edges of the upper after its attachment to the insole.

          AmE knock up is a more general expression for 'prepare quickly'. So if you knock up a pie (or a three-course meal or anything else) in AmE, that's talking about the whole process of preparing it, from start to finish.

  • proof / prove In BrE, you prove dough and (traditionally) in AmE you proof it (unless you've watched lots of GBBO).

Verbs of preserving 

  • can v tin/bottle: Say you have tomatoes that you blanch and put into jars for use later in the year, in AmE that would be canning even though the tomatoes are going into a glass jar. You could also talk about canning if you were putting things in a jar to pickle, I think—it's just our general word for what to do when you have a glut of some fruit or vegetable that needs saving for later. The OED suggests tin (for putting things in metal containers) and bottle as BrE equivalents, but I think maybe for putting things in jars more general-English words like preserve and pickle might be more used? (Let us know in the comments.) Bottle would be used in AmE if you were putting things, like sauces or liqueurs, into bottles, but not usually for jars.

Verbs of meat preparation

  • French: this one (not in my vocabulary) I got from the OED:
transitiveCookery (now chiefly U.S.). To prepare a joint by partially separating the meat from the bone and removing any excess fat.
  • tenderize orig. AmE, but has been in BrE since the 1970s

Jim recently (ish) wrote to ask me about this line he read in Magpie Murders by Anthony Horowitz:


At the time, I hadn’t completed a deal with the BBC and the whole thing could have gone west.



Jim wondered about that gone west, which seemed to be equivalent to AmE gone south

Twenty-some years in the UK, and I hadn't knowingly encountered that meaning of go west. But it's definitely out there.


Cambridge Dictionary
 gives the sense that Horowitz probably intended, and marks it as "UK informal".

American words (most) British folk don't know

Some years ago a survey went (a)round from the University of Ghent on English vocabulary knowledge. I recall doing the survey and I believe I shared it on social media. Perhaps you did it too. Last week I read the published results: Word prevalence norms for 62,000 English lemmas by Marc Brysbaert and colleagues.


The point of the research was to establish how well known various words are in order to help psychologists (etc.) choose words for experiments. I was pleased to see that it included a table showing words that differed most for AmE and BrE speakers. So, my plan is to write two blog posts where I go through the lists of unevenly known words and see what I can say about them (or what I have already said about them). I'm starting with the words that were much more familiar to Americans and I'll put them into categories, rather than going down the list as published.

Here's the (half) table. (Sorry it's not very clear. All the words will be mentioned below.) The unfortunate headings 'Pus' and 'Puk' mean 'prevalence for US respondents' and 'prevalence for UK respondents'. These are not the prevalence scores that one can find in the data files from the paper (which are z-scores with positive and negative values), though, so I think they are just percentages—i.e. 90% of US respondents knew manicotti, but only 16% of UK ones did. The main point about them is that the scores are much higher for American respondents than British ones. 


 

Many of these words are relatively unknown in the UK because they refer to things that are not common in the UK. So, less linguistic difference than cultural difference. Many reflect the US's ethnic diversity.

Glorious food

The Italian American angle

The first two are pasta-related. Manicotti are a kind of large tube pasta, which are stuffed, usually with ricotta, to make the dish pictured to the right. The name is used both for the empty pasta and for the dish. It comes from the Italian for 'little sleeves', but is, according to Wikipedia, "an Italian-American dish". BrE speakers are more likely to know the very similar pasta/dish canneloni, which is also found in the US and Italy. The difference? "Manicotti tubes are ridged, larger and slightly thicker. Cannelloni tubes are smooth, a touch smaller and slightly thinner."*
 
Ziti is a smaller tubular pasta. Size-wise it is between penne (popular in both countries) and rigatoni. Rigatoni is what my family traditionally had for Christmas Eve dinner, and I usually have to explain that word to BrE speakers as well. (The study confirms that Americans are much more likely to know rigatoni.)  Wikipedia notes that "Ziti in the US is most commonly associated with the Italian-American dish of baked ziti. In Sicily it is traditionally served at a wedding feast." For more on pasta more generally, click through to this old post.
 
Provolone is an Italian cheese that you can get in the UK, but you just don't see as much as in the US. I like it on hot pastrami sandwiches, but it's usually in Italian dishes. Whether you pronounce the e at the end (when using the word in English) is a matter of personal preference—or possibly regional affiliation.
 

Fresh-water foods

Tilapia is a fresh-water fish that is apparently easy to farm. Its popularity in the US is fairly recent—I only learned it on a trip back to there maybe 15 years ago. Wikipedia says: "Tilapia is the fourth-most consumed fish in the United States dating back to 2002". It's originally from Africa, and the name is a Latini{s/z}ation of a Setswana word for 'fish'. Apparently you can get tilapia in the UK, but it's just not as common. My guess is that an island nation has less need of fresh-water fishes to eat.
 
Crawdad is a synonym for crayfish (or crawfish), which are abundant and popular as a food in some parts of the US. The word crayfish is used in both UK and US, and crawfish will have come over from the UK. The OED's etymology is helpful:
Etymology: Middle English crevice , -visse , < Old French crevice (13–15th cent. in Littré); compare crevis (masculine), crevicel diminutive in Godefroy; in Old French also escrevisse , modern French écrevisse , Walloon grèvèse , Rouchi graviche (Littré); < Old High German crebiȥ Middle High German krebeȥ , a derivative of stem *kraƀ- in krab-bo crab n.1
In Southern Middle English the second syllable was naturally confounded with vish (written viss in Ayenbite), ‘fish’; whence the corrupted forms [...], and the later crey-, cray-fish. The variants in cra- go back to Anglo-Norman when the stress was still on second syllable, and the first liable to vary between cre- and cra-; they are the origin of the modern craw-fish, now used chiefly in U.S.
So, the craw- came from the UK and later was mostly forgotten there. The -dad seems to have been added in the US as a "fanciful" variation, according to Oxford. Their example sentence includes more synonyms:
‘Whether you know them as mudbugs, ditch bugs, river lobsters, crawlybottoms, crawdads, or crawfish, anyone who has spent time in streams is familiar with crayfish.’

The Mexican-Spanish angle

Tomatillos are a member of the physalis family that look kind of like green tomatoes with husks. (Wikipedia gives Mexican husk tomato as an alternative name. The GloWBE corpus only has that one in South Asian countries.) You don't see these much in UK.  For the type of physalis you frequently see in the UK, here are some old tweets of mine

A tamale consists of a leaf wrapped around a filling—often a corn husk around a maize dough called masa.


Other foods, other cuisines

Kabob is simply a different spelling from what BrE speakers are used to. In BrE it's usually kebab. Since it comes from Arabic (and other languages that got it from Arabic), it's not surprising that the spelling varies—that happens easily when different people are moving a word from one alphabet to another. The cultural place of this food is very different, though. Americans tend to think of shish kabobs—little pieces of food (especially meat) on a stick, typically cooked over fire. In the UK, one often thinks of doner kebabs, which AmE speakers might call gyros, getting the idea from Greek rather than Turkish. That's the compacted meat cooked on a big spit, then sliced off for putting in a pit(t)a bread or similar. In the UK, that kind of kebab is stereotypically found at the end of a night of binge drinking. 
 
(Late addition: here's a corpus view. Note that K-Bob is not a spelling of this food. It's a prolific commenter's handle on a political website. Kubab and Kibib are names of other things as well.)



In AmE hibachi is usually a tabletop (AmE) grill/(BrE) barbecue or a kind of iron hot plate used in Japanese restaurants. The word comes from Japanese, but has shifted in meaning. Wikipedia can tell you more. 

Kielbasa means 'sausage' in Polish, but in AmE it refers to a specific type of sausage, which Wikipedia tells me "closely resembles the Wiejska sausage". You can find the word kielbasa in the UK in Polish shops, but it remains to be seen how many of these will survive Brexit.

Goober (or goober pea) is a regional (mostly southern) word for
the peanut. It came into English from a Bantu language (perhaps Kikongo or Kimbundu), brought to the Americas by enslaved Africans. Americans who don't use this as a word for peanuts will still know it as a brand name for chocolate-covered peanuts—a mainstay of (AmE) movie theater/(BrE) cinema concession stands.
Goober can also refer to a foolish person—but that might have a different etymology. (Goober Pyle was a kind but simple character on The Andy Griffith Show—which still shows in repeats on US television.)

Medicine / disease

Two of the items in the list are generic drug names. I've written about acetaminophen (BrE paracetamol) in another post. Albuterol is a bronchodilator (asthma inhaler) known in the UK as Salbutamol, but I'd bet most BrE folk are more familiar with the trade name Ventolin. In the UK, this comes in a blue inhaler, while preventative inhalers' sleeves are mostly brown, so they're often referred to by colo(u)r: take your brown inhaler twice a day and your blue inhaler as needed.
 
Staph is short for Staphylococcus bacterium. Americans worry about getting staph infections. I'm sure British people do too, but they haven't obsessed about this particular germ enough to it a nickname. (At least, not until MRSA came along. That's is a very severe kind of antibiotic-resistant staph infection, but Americans talked about staph infections long before that was in the news.) I remember staph being mentioned a lot in relation to gym mats at school. A partner to staph is strepwhich (looking at the data file) is also much, much better known in AmE than BrE. Now I see I've written about both of these germs before. So please have a look at the post on infections for more info!
 
I'll stick chiggers in this category. They're not a disease, but they feel like one. Chiggers are the larvae of a kind of mite. They burrow under the skin and it itches LIKE HELL. They exist in the UK and some people call them chiggers here, but the word comes up a lot less. Where I'm from, you get chigger "bites" from walking around in grass with bare ankles. There is less cause for walking around in grass with bare ankles in the UK, thanks to fewer lawns and colder weather, so I assume that's why people talk about them less. Wikipedia lists other names for them, which I've looked for in the GloWBE corpus. I give the US/UK (in that order) numbers after the names: berry bugs (1/0), harvest mites (1/2), red bugs (4/1), scrub-itch mites (1/0), and aoutas (0/1). Chigger is the most common name for them in both countries, but with 48 hits in AmE and just 7 in BrE.
 

Other cultural references

Kwanzaa is an African-American holiday that takes place between Christmas and New Year. I assume that's what Americans were recogni{s/z}ing in kwanza, rather than the Angolan currency

A sandlot is a piece of undeveloped land. The word is used especially when such land is used as a playing field, e.g. sandlot baseball.
 
A luau (or lūʻau) is a traditional Hawaiian party with food and entertainment. 

And all that's left is...

Conniption.  Origin unknown. It means a tantrum, hysterics, a fit of rage, and the like. It's often used in the phrase conniption fit (which means the same thing). Here are a few examples of its use from the Corpus of Contemporary American English:
  • They had a conniption when he starred in a movie
  • Your mom'd have a conniption fit if she heard you talkin' like that. 
  • wealthy Americans have conniptions at the possibility of a tax increase

grammar is relationships


This is not a post about American versus British English. I hope you’ll indulge me. It's come out of some Twitter conversations this afternoon.

It started when I read this sentence in James Pennebaker’s book The Secret Life of Pronouns:
Function words require social skills to use properly.

And I wondered how it had got(ten) past a copyeditor. So I did a Twitter poll to see if other people were happy with the sentence. The poll looked like this: 


So, 25% of more than 300 people thought it sounded fine. 75% felt there was something weird about it. Given how I phrased the question, it's possible that the 75% had 100 different reasons for thinking it weird. But considering some of the tweet-replies I had, I know that at least some people had the same reaction that I did. 

The problem with the sentence for me is that there is no reasonable subject for the verb to use. Compare it to this sentence with the same kinds of parts in the same order:  
 The law requires every driver to drive safely.

In that case, the subject of the infinitive to drive is every driver—every driver is to drive safely. So, what you've got is:
  • Main verb: requires
  • Subject of main verb: the law
  • Object of main verb = infinitive clause: every driver to drive safely

But that doesn't work for Pennebaker's sentence. Social skills to use properly is not a complete clause because (a) there's no object of the verb to use (to use what properly?), and (b) social skills is in a position where it could be the subject of to use (as in the driving example), but it's not.  The sentence could be "fixed" in a number of ways that involve making it clearer that function words are the things being used.
  1. Make the infinitive into a passive, so it's clear that function words is the object of use: Function words require social skills to be used properly.
  2. Move use closer to function words so that it's clear how they relate to each other: To use function words properly requires social skills. (Or Using function words properly requires social skills.)
  3. Move function words closer to useIt takes social skills to use function words properly.
Number 1 is a little ambiguous (it sounds a bit like function words are bossing social skills around), so I'd prefer 2 or 3, where it's really clear that function words is the object of use

But there are sentences with require that do work more like Pennebaker's sentence:
Crops require water to grow.

Here, it's not the water that's growing, it's the crops. So it doesn't work like the driving sentence—the object of require is not water to grow. In both sentences, I've put the object of require in blue, so you can see that the sentences have different structures. Another way that you can tell they're different structures is that you can replace to with in order to in one and not the other and can rephrase one with that and no to, but not the other.
The law requires every passenger in order to drive safely.
Crops require water in order to grow.

Crops require that water grow.

So one of the reasons I wanted to write this post is to make this big point:
Grammar isn't just where words go in a sentence, it's how they relate to each other.
The fact that the crops sentence is the same shape as Pennebaker's sentence doesn't mean that Pennebaker's sentence is grammatical, because it still has the problem that there is no subject for to use. Notice that it can't be rephrased in either of the ways that the other two can:
Function words require social skills in order to use properly
Function words require that social skills use properly
The last possibility is to interpret use as being in middle voice (as opposed to active or passive voice). This is when the verb acts kind of like a passive (where what would have been the active object becomes the subject), but doesn't get the passive be +past participle form. English has some verbs that work this way.
I cut the bread easily. (active voice: subject is the cutter)
The bread is cut easily. (passive voice: subject is what's cut)
The bread cuts easily. (middle voice: subject is what's cut)
Grammar Girl has a podcast and post on middle voice in English if you're interested. English has more of a 'middlish' voice than a 'middle', as we're really limited in how we can use it and it doesn't have a special verb form, as it does in some other languages. As Grammar Girl notes:
[English] middle-voice sentences usually include some adverbial meaning, negation, or a modal verb, or a combination of the three. “The spearheads didn’t cast very well” has both negation (“didn’t”) and an adverb phrase (“very well”). “The screw screwed in more easily than I thought it would” has the adverb phrase “more easily than I thought it would.”
While Pennebaker's sentence does have an adverb, properly, it's not one that I'm super-comfortable using with a middle construction (?The bread cuts properly), but maybe some people would like it better than I do. (Proper is used more as an adjective and adverb of intensity in some colloquial BrEs than in my AmE.)

So, are the 25% who like the sentence reading it as having middle voice? I'm not totally convinced, because I think that the English middle doesn't do well with fancier sentence constructions as with require:
?That bread requires a good knife to cut easily.
?That bread requires a steady hand to cut easily.
Putting an object between requires and to makes it confusing—is it the bread or the knife/hand that is cutting easily? If it's the knife or hand, then the sentence would usually require an it to stand for the bread: The bread requires a good knife to cut it easily. 

So, anyhow, when I put the Pennebaker sentence up, some people wondered if it was like this dialect phenomenon, found in some parts of the US (particularly western Pennsylvania) and some parts of the UK (particularly Scotland):
The car needs washed.
It was natural for them to make that connection because both Pennebaker's sentence and the needs washed sentence would work in other dialects if the final verb were made passive. But note that what needs to be added to the sentences to create a passive is different in the two cases. In needs washed, the washed is in the past participle needed for a passive. But in Pennebaker's sentence the infinitive verb is not in any way in passive form.
The car needs to be washed.
The function words require social skills to be used properly.

So, I asked the 25% who accepted the sentence to write back and tell me where they were from. And it turns out they're from anywhere.... New Jersey, California, New England, southeastern US, eastern and western Canada, up and down the UK, the Caribbean. That makes it look like it's not a dialect feature. 

An interesting thing about the 25%, though, was that a few got in touch to say: "I clicked that the sentence was fine for me, but once I started thinking about it, I was less sure."

After the dialect idea didn't pan out, I joked that the next step was to give personality tests to people who didn't like the sentence. And while it was a joke, I think there is probably something to the idea  that some people read for meaning and don't get the grammatical 'clang' that I got because getting the meaning is good enough. If they can get the meaning without a deep look at the grammar, the grammar is irrelevant. I'd wonder if people who get a 'clang' with this sentence are also more likely to also notice misplaced modifiers and dangling participles. A lot of us who notice these things notice them because we've been trained in looking at language analytically, or we're just very literal readers. Had I heard Pennebaker's sentence, I probably wouldn't have noticed that there was no workable subject for the verb use. I would have just understood it and gone merrily on my way. But in reading, CLANG.


Anyhow, the main reason I wanted to blog this was to make that point that Grammar is how words relate to each other. That two sentences with the same shape can be working in very different ways. And on that note, I'll leave you with an experiment that Carol Chomsky did way back when. She gave children a doll with a blindfold over its eyes and asked them if this sentence was true—and if not, to make the sentence true.
The doll is easy to see. 
Notice how that sentence doesn't work like this sentence:
The doll is eager to see.
In the first, the doll is being seen. We can paraphrase it as The doll is easy for me to see. In the second, the doll is who will do the seeing. We can't paraphrase it as The doll is eager for me to see, because it means The doll is eager for the doll to see. The words easy and eager determine how we interpret the relations of the other words in the sentence. In linguistic terms, they license different relationships in the sentence. (In these sentences it's adjectives doing that relationship-determining, but in most sentences, it's the verbs. In our requires sentences above, we can see that require licenses a range of possible sentence structures—words do that too.)

Understanding that a blindfolded doll is easy to see is something that most kids don't master till they're into their school years. When asked to make the doll easy to see, the younger kids take off the doll's blindfold. This shows us that kids take a while to fully take account of the grammar, not just the words, in sentences.

Untranslatables VI: the summary

As previously announced, this was the sixth October during which I tweeted an 'British–American untranslatable' (that is, item lexicalized in one national dialect and not the other) on each weekday. If you'd like to complain that any of these does not qualify as 'untranslatable', please first read my provisos about what's meant by untranslatable in this context.

This year's was a bit British-heavy, though in looking back on previous years, I noticed that some had more American ones, so perhaps it all works out in the end. 

BrE rough sleeper  'homeless person who's sleeps outside, as opposed to in a shelter or other temporary accommodation'.  Suggested by John Kelly (@mashedradish)

BrE gongoozler originally, 'an idler who watches canal activities', now more broadly, 'a person who stares for long periods'.  Suggested by Andy M. (on Facebook)

AmE to t-bone '(for a motor vehicle) to crash into another vehicle perpedicularly'.  Suggested by Rhonda (on blog). (This one has started to have currency in UK—but the steak cut that it's named after is not traditional in UK butchery.)

AmE to kick the tires 'to determine the worth or "health" of something by testing it'. Suggested by @SimonKoppel. This has spread beyond the US, with some people (Australians, in my correspondence) interpreting it specifically as something done by people with no intention to buy. I liked the OED entry that says it's orig. U.S. Not with that spelling, it's not!


BrE (to give someone a) backie (also backy)  '(to give someone a) ride on the BrE parcel shelf of a bicycle'. Suggested by @formosaphile. Responses to this tweet brought up a lot of variants: Australian dink, dinky, New Zealand dub, and a number from the UK, which Moose Allain has put together into a slide show. But none from the US, as far as I've heard.

AmE third base (etc.) as measures of sexual accomplishment. Covered previously here.  Suggested by @Mburked

BrE love rat tabloid term for a male adulterer. Here's Collins Dictionary on it. (Sorry, someone suggested this, but I failed to note who!)

AmE candy striper a usually female, usually teen-aged hospital volunteer. Suggested by @CityMelzer A bit more on the term from Wikipedia.

BrE to blot one's copybook  'to do damage to one's own good reputation'. Here's the discussion of it at World Wide Words.

BrE Johnny Foreigner '[pejorative] personification of non-Britishness', often used satirically. Here's the Collins entry for it.

AmE big box store 'box-shaped single-company retail building at the edge of town'. Possible BrE translations discussed at Wikipedia.  Ta

BrE for in, for example, 7:00 for 7:30, which means 'come after 7, but by 7:30, when things will get started'. Or, as Andrew Caines defined it: "You'll be rude if you arrive up to and including 7:00, or any time after 7.29". 

AmE condo(minium) 'building consisting of residential units that are individually owned' or 'an individually-owned unit within such a building'. In AmE condo generally contrasts with apartment (building)—the former is rented, the latter owned. In UK, they're called (blocks of) flats regardless of owned/rented status. In some parts of the US, there are also co-ops. The difference between condos and coops is explained here. I'd tried to conceptualise this in terms of the difference between flat ownership with a leasehold versus a share of the freehold in England, but that's not right (see comments). BrE I’ll be mother 'I'll serve the tea [or other food/drink that needs serving-out]'  Suggested by Rhonda on the blog.

BrE graunch used as a verb or noun onomatopoetically for a grinding/crunching sound, as when gears in a car grind. (OED lists this as [UK] dialectal & New Zealand.) Suggested by April23rd on blog.

AmE (esp. Californian) lookie-loo (and spelling variants) 'nosy person who goes to (AmE) real-estate open houses with no intention of buying'. It's also used (esp. in other parts of the country) as a synonym for (orig. AmE) rubber-necker. Suggested by Michèle, seconded by @cynderness.

BrE paddle 'go into water (especially the sea) without swimming, particularly walking in up to the knees or so'. In AmE, I'd just say wade, which isn't specifically about getting your feet wet for fun. Suggested by @simonkoppel.

AmE Monday morning quarterback 'person who criticizes others using hindsight the others couldn't have had'

BrE ready reckoner 'quick-reference table that gives solutions to simple calculations'. AmE has things like cheat sheet, quick reference, but those could be, say, lists of definitions, rather than a table of calculations.

BrE glamour model euphemistic expression for 'woman who poses topless' (particularly for certain UK newspapers and BrE "lads' magazines").

Will I find enough for a seventh year in 2017? I've already started the list, so maybe.  Feel free to keep suggesting them! Thanks to everyone who's helped this time.

levee, dyke, embankment

Embankment station District Circle roundel I'm often told (by Brits) that Americans are prudes when it comes to language. And I can often demonstrate the error or hypocrisy in their claim. Tidbit/titbit is one I've covered here so far. Another one is levee, which an Englishman informed me is used because Americans don’t want to say (AmE) dike/(BrE) dyke for a built-up bank to prevent the overflow of water.

So let me count out my objections to his claim:

1. Levee has been used in North America since the 18th century. (Orig. AmE) dyke has only been (slang (or a hyponym) for 'lesbian' since the 20th century. So, Americans definitely didn't start saying levee to avoid association with lesbians.


2. If you're an American like me, you primarily know levee from Don McLean's song American Pie, where it is a convenient rhyme for Chevy. (This is at the top of the 'Lynne's most hated songs' list. I hope I haven't earwormed you with it. My day is ruined.) I think of it as a Louisiana thing (it is used all the way up the Mississippi River), and that's where it came into English, from French. (That part of the continent came into the US with the 1803 Louisiana Purchase.) It may be more common now that people have heard it more in the news because of extreme weather in the Gulf States, but I still think of it as a vaguely regional term, rather than pan-American.

3. I only really knew the word dike from the story of the Little Dutch Boy. Where/when I grew up, I'd've  called it a little dam (because we weren't put off by the homophony with damn either!) But note the spelling. The main American spelling of this thing is dike, whereas the 'lesbian' sense is usually spelled/spelt dyke, which which Merriam-Webster lists as 'chiefly British variant of dike'.  So, in printed form, at least, the 'taboo' sense and the 'built up bank by the river' geographic (or is it architectural?) sense are a bit more linked. Living in the 'gay capital of Britain' near a place called Devil's Dyke, I can tell you that the British are aware and amused by the punning potential. In that sense, though, it tends to be for a natural feature, not an artificially built-up place by a river.

4. It’s not like the British are freely going about saying dike for the meaning 'levee'. They tend to prefer the word embankment for such things. Who are the prudes now?
